encoding/json/v2: improve documentation

This improves the documentation of:
* Unmarshal regarding handling of non-addressable values.
* GetOption regarding the return value when presence is false.
* MarshalFunc regarding ownership of the returned []byte.
* MatchCaseInsensitiveNames regarding how this might affect marshaling.
